The stock jetting of the 700 carbs would certainly be rich on the 540 and I'd look for jetting specs. of any stock 600cc twin with the same carbs as a starting point.

F.Y.I. This is from the article section on 1986 update porting.
Regarding the carburetion on the update port V-Max, the stock 38mm carbs are all the engine requires. Larger carbs will not increase airflow or horsepower on this engine. This is similar to a Wildcat, which developed the same airflow and horsepower with either 38mm, 40mm, or 44mm carbs.

Just my thoughts...... the flatslides may increase the bottom end throttle response just, don't expect large H.P. gains ?

The mxz 700 used a 280 jet, to lean for the vmax remember they had a final jet size of 290 with a power jet also,I have 310 in mine with flatslides and stock airbox,if you dont run an airbox I would jet up even more.
