87 Vmax Project

Well I've began trying to get my 87 Vmax to run for a second time tonight. Its been parked in a garage or shed for the last 4 years after I acquired it.
A little history on the sled it was given to me by my second cousin about 4 years ago. He said it was recently rebuilt and parked. I being young/dumb/excited dumped gas and oil in the cylinders and started pulling. Later to find out that a carb was seized and a rats nest in the airbox. It sucked in tons of crap and only ran for like 30 seconds.
So I went online and ordered 44mm carbs as bigger is better, mentality of a young adult. Once I received them I realized the throttle cables wouldn't work. It was at that time I gave to a friends Dad that specializes in vintage sleds to take a look at it. He got the carbs hooked up and told me I'd need a rebuild most likely. Didn't have money at the time so got sled back and it sat.
My wife brought up this year after we have bought our house and our kids are getting a little older she thought it would be a cool project to do together. So tonight we began took airbox and carbs back off. Put Mystery Oil in cylinders and pb blaster on intake side of carbs.
My questions are as follows:
1. Any good topics for how to hook up 44mm carbs? Or should I find a set of 38mm? The 44mm do not have spots for carb switch. Can I bypass?
2. Should i just remove engine and rebuild since it sucked rats nest into it?
3. If pistons measure out with micrometers, rings should do?
We are not looking to make it perfect. Just looking to make it worthy to drive around on some trails. No long trail days. Definitely do not want to spend thousands making it perfect.
